The menu of chef Jessi Singh's newest Melbourne restaurant may not feature what you'd think of as 'authentic' Indian food – but that's the point. Singh takes inspiration from traditional Indian home-cooking and throws in a contemporary twist, adding very Australian ingredients. The result is a menu that's decided 'unauthentically Indian-Australia'. Highlights include pork-neck vindaloo, and blue-cheese naan pizza, with plenty of vegetarian and vegan offerings to choose from – enough to earn it a place on the 2019 delicious.100 list. Drop in for a lunchtime thali and tipple, or dine in at night with a cocktail and Bollywood soundtrack.
