Chef Shaun Quade and his team opened Lûmé in 2015, in a former burlesque club located on the leafy side streets of South Melbourne.

The restaurant has always been a little left of centre—known for Shaun’s eccentric style of cooking and multisensory dining experiences. In 2019, as he works on his next venue, he’ll take over as GM of Lûmé and hand over his apron to new talent—Chef John Rivera (San Pellegrino Young Chef of the Year, Pacific Region, 2018; Gault & Millau Young Talent of the Year 2017).

John started at Lûmé when the restaurant first opened—and has worked closely with Shaun as a mentor ever since.

While guests will not find Shaun’s iconic Pearl on the Ocean Floor dish on the menu anymore (must keep things fresh), John will serve his own interpretation of contemporary Australian cuisine under the Lûmé lens.
