Lûmé‘s tasting menu is a journey into the flavours, textures and ingredients not so frequently travelled. Imaginative, artful and perhaps a little eccentric, Executive Chef Shaun Quade (winner 2017 Gault & Millau Australian Chef of the Year) is on a mission to play with perception.
Opened in 2015 in a South Melbourne terrace house, formerly home to a burlesque club, the Lûmé team share an unrelenting desire to experiment with taste, technique and minds.
Artfully deceptive, Lûmé takes a thoughtful and considered approach to dining. They believe that a meal is not purely about taste - rather, it's an engagement of all of the senses. That's why their team is not limited to chefs and front-of-house professionals, but to musicians, actors, artists, psychologists, perfumers, scientists and any other element they can conjure that contributes to the multisensory journey.
In 2017, Lûmé received two hats from The Age Good Food Guide. The restaurant’s head bartender, Orlando Marzo, was named World’s Best Bartender in the prestigious Diageo WorldClass Cocktail Competition in 2018.
