The humble apple. It may not be the first thing a French chef reaches for when creating their pièce de résistance, it doesn’t have the festive allure of shiny, ripe cherry, and it is nowhere near as intense and expensive as a truffle, but owner of Black Barn Farm, Jade Miles, loves that about it.
The apples in her fifth generation orchard are proudly clean of pesticides, grown with regenerative farming and permaculture practices, and ripe for the picking.
