Perhaps it's the cool elegance of Verge's glass and concrete design, or its unobtrusively fine service, or its discreet location 'neath a city apartment block … but Verge is the quiet achiever of Melbourne fine dining. For a decade it's delivered some of the city's best and most exciting food. Espresso-poached watermelon, potato custard and onion 'glass' bring zing, crunch and flourish to a delicate, cold-smoked veal tartare. A tangle of poached snapper and shaved cauliflower in buttermilk custard is silky, with a soupçon of clear tomato broth, and gets textural oomph from toasted rice and salmon roe. Super-fine shreds of flash-fried lamb complement rich smoked house-made ricotta. Velvety roasted rolled rabbit arrives on saffron cream with heirloom carrots and grain and mustard fruit crumble. Masterful. And an edible fairy garden of meringue, melon balls, rockmelon sorbet, caramel custard and crunchy candied seed makes a fanfare finish. Informed, intuitive service rounds off a superlative experience.
