A converted warehouse oozing Shanghai chic, David's elegance is evident in its food as well as in details like the blossom-patterned drum lights above white-clothed tables. This is refined Shanghainese cuisine, modified slightly to suit nattily-dressed diners without losing its integrity, though still including crowd-pleasers like house-made dim sum or sang choy bao. The menu emphasises the medicinal power of food: subtle chicken soup with bamboo shoots and wolfberries is said to boost the immune system. Follow with steamed rockling fillets, pickled vegetables and mushrooms, or chicken fried with dried chilli, garlic and dark, spicy soy. The ginger-rich flavour of 'Emperor's Beef' complements good fillet steak. Desserts veer from predictable (green tea icecream) to unexpectedly occidental (white chocolate dumplings). House-blended teas are a signature – orange-tinged 'Calm and Concentration' blend's description could apply equally to the serene staff.
