An ever-changing set menu features produce from Brae’s on-site vegetable plots and fruit orchards, the surrounding land and local farmers to showcase a unique cuisine built around an immense respect for nature and seasonality.
Brae farm, the restaurant and guest suites are all managed sutainably with regenerative farming techniques used to restore the land. Organic principles are employed to produce seasonal vegetables, stone fruits, citrus, nuts, berries and olives for organic extra virgin oil from an established grove of more than 100 trees. Resident chickens supply free range eggs, while bees produce honey and assist with pollination.
Six eco-friendly luxury guest suites feature king beds, organic cotton bed linen, star-gazing sky light, Tait outdoor furniture, Jardan sofas, a vinyl record collection (David Bowie, Miles Davis, Grace Jones, Nick Cave, Lorde, Beck, Caribou), Thorens turntable with in-ceiling speakers, cocktail bar, temperature controlled wine fridge, underfloor heating, bath with views to the rolling hills of The Otways and private outdoor areas.
