The Independent is a casual restaurant and bar found at Puffing Billy’s last stop - Gembrook. It is a food hub - with menus designed by Argentinian chef, Mauro Callegari. Produce is sourced as local as possible, for guests to enjoy a seasonal sharing menu.Mauro’s dishes are influenced by his upbringing in Argentina and passion for Spanish, Italian, Creole and North African flavours. The Independent offers a $58 set menu for lunch and dinner which is designed daily by Mauro, Manuel and the kitchen team sourcing seasonal produce available to Gembrook.It is open for lunch and dinner, Wednesday to Sunday, with the bar and kitchen remaining open all afternoon, pleasing locals, families and visitors to the Dandenongs and Yarra Valley. Favourite dishes are the suckling pig and slow roasted lamb shoulder, however majority of the menu can satisfy the needs of many gluten free and vegan diners.
