For a textbook example of the authentic Daylesford dining experience, Mercato is the place to go. Housed in a beautiful 1860s timber building with high ceilings and wooden floorboards, it exudes good taste and understated style, as does the food. Chef and owner Richard Mee makes the most of local produce, with specialities such as Tuki trout and Kyneton beef and kangaroo. The cheeseboard is the stuff of legend.
